The Best MAKI with my secret sauce recipe!

 

 

Summer is coming, and with it, a desire for light meals. Maki is particularly good for this. I’ve perfected my Maki preparation over the last few weeks and have been addicted to these little things ever since. These Maki are better than your favorite store. I know, big words, but give it a try.

 

Ingredients (for about 5 rolls) / about 2 hours

 

  • 200g sushi rice (I like the Royal Tiger one, bought at Coco Asian Supermarket )
  • 300ml of water
  • 4 tbsp rice vinegar (Kikkoman’s is great)
  • 1 pinch of salt
  • 20 grams of sugar
  • nori sheets
  • wasabi
  • 1 avocado and 1/2 cucumber (preferably organic quality)
  • Sesame sauce (my number 1 is from Kingzest, you can get it at  Coco Asian Supermarket & my number 2, Tasty Ideas Wok Sauce, is  available at  Spar )
  • soy sauce
  • 3 tsp mayonnaise
  • toasted sesame

 

Maki preparation

 

Place sushi rice in a bowl and cover with cold water. Wash/knead the rice until the water turns cloudy. Put the rice in a sieve and rinse well with cold water.

 

The rice goes back into the bowl and is covered with cold water, so let stand 30 minutes. Heat the rice vinegar, salt, and sugar in a saucepan until the salt and sugar dissolve. Let the liquid cool down.

 

Slowly simmer the rice in 300 ml of fresh water until the water boils away. Put the rice in a large soup bowl and cover it with a cloth napkin. Leave to stand for 30 minutes. Mix rice with vinegar liquid. Wet the cloth napkin and cover the rice again for 30 minutes.

 

Peel the avocado and cucumber and cut them into thick strips.

 

Done, now we can roll Maki

 

How to roll Maki

 

Set aside a bowl of cold water to comfortably moisten the nori sheets, and your fingers don’t stick to rice. Moisten the nori on both sides. Cover half of the nori with rice.

 

First comes wasabi, then avocado, followed by a dash of sesame sauce and toasted sesame seeds. Roll up using a rolling sushi mat.

 

Divide the roll into 6 equal pieces and place them on the plate. Now comes my “secret sauce” this is the game-changer. You have to mix 3 tsp mayo with 3 tsp soy sauce until the consistency is nice and creamy.

 

This comes on top of the Maki with extra soy sauce. Don’t forget the toasted sesame. Next, you can prepare a roll with cucumber. Have fun cooking and especially enjoying.

  • Extra tip: Always prepare Maki fresh. Sushi rice gets hard in the fridge.
